This creamy and sweet chia seed pudding is so full of goodness it can be eaten for breakfast, a light snack or as a silky sweet dessert. As it has a base of coconut cream, and is naturally sweetened with a touch of honey or maple syrup, it is free from refined sugar, dairy and gluten.
In a glass bowl or large jar, add all of the ingredients.
You can choose to omit the Toasted Coconut shavings from the pudding and use it as a topping when serving.
Mix well, place in the fridge then leave to soak overnight or for at least 2 hours.
Serve with fruit and a sprinkle of cinnamon.
